Patisdécor powdered egg whites are dehydrated by drying and then pasteurized. Once rehydrated, the powdered egg white regains all the qualities of fresh egg whites: it whips up into stiff peaks and holds its shape just like fresh egg whites, even better! In fact, this product has a superior coagulating power compared to fresh egg whites: it whips up more easily and holds its shape better over time.
Dehydrated egg white is particularly well-suited to recipes that only require egg whites: no more wasting egg yolks! You can easily use it for making macarons, which is quite complex and requires egg whites at a specific temperature.
It also has many other uses: pastry making, charcuterie, pasta, and prepared dishes.
The powder dissolves more easily in warm water with gentle stirring.

100g of powdered egg white makes 800g of egg white with 700g of water. Equivalent to 1 egg white: 4g of powder to 28g of water.
Ingredients: Powdered egg white, foaming agent: triethyl citrate E1505.
May contain traces of gluten, soy, milk, nuts, lupin, and sulfites.
